Abstract: Surface coating is an inexpensive and effective method to preserve the internal quality and prolong the shelf life chicken eggs. Mineral oil is one of the commercial type coating materials with proven results. Therefore, this study was planned to determine the effect of beeswax, gelatin and Aloe vera gel coatings on functional properties of chicken eggs. Four hundred and fifty (450) brown shell eggs of 32 weeks old Lohmann classic brown layers were obtained and randomly divided into five groups as ninety (90) eggs per group. Four egg groups were randomly coated with one of the four coating materials: mineral oil, beeswax, A. vera gel and gelatin.
