Abstract:
Dadih is a traditional Indonesian buffalo milk product that is fermented naturally and that is believed to have many benefits to human health, this can be attributed to the nature of the lactic acid bacteria involved in the fermentation process. In the fermentation process, lactic acid bacteria alter complex organic molecules compounds such as proteins, carbohydrates and fats into simpler molecules, easily soluble and high digestibility. In this study, antimicrobial activity was performed by diffusion method in order to fight the pathogenic bacteria Salmonella enteritidis strain ATCC BAA-711, Salmonella enteritidis strain local Malaysia code number 4301/15, Escherichia coli strain ATCC 35401and Staphylococcus aureus strain ATCC 2592.
