Abstract:
Quality differences among the three Ethiopian plantation white sugars from Metahara, Finchaa and Wonji sugar factories and refined sugar (control) in reference to the carbonated soft drink industry requirements were evaluated. Degree of pol (oZ), sucrose (%), color (IU), turbidity (IU), pH, reducing sugar (%) and SO2 (mg/kg) for the three sugar samples were: 99.73–99.79, 99.73–99.79, 210-271, 181210, 6.59-6.82, 0.032-0.083 and 10.60–13.11, respectively, and for the control sugar sample were: 99.94, 99.94, 36, 10, 7.21, 0.076 and 0.00, respectively.
