Abstract:
Lactic acid bacteria (LAB) strains were isolated from fermented cassava tubers and the activities of the resultant secondary metabolites assessed as biocontrol agents against two bacterial pathogens (Escherichia coli O157:H7 and Erwinia carotovora) associated with contamination and spoilage of fresh fruits and vegetables.
