Abstract: Plantain is widely cultivated in Africa and they are consumed after taking them through various methods of cooking. The riped and unriped pulps are used in making many delicacies. As a climacteric fruit, technology should be applied to process them to increase their shelf life and also develop new products which will be accepted by consumers.
